Blending his Argentinian heritage with the vibrant culture and diverse landscape of Cabo, he oversees every gastronomic experience a guest has on property. His goal? That each and every meal will be unforgettable.

Sometimes that looks like incorporating the unique ingredients guests bring along with them. Other times it means developing menus with nutritional preferences in mind, like vegetarian, vegan or gluten-free. And sometimes it means a celebratory, personalized paella-making class with a guest who visits every year. Whatever the moment or experience, Schwuger’s determination to personalize each experience and welcome guests into his restaurants, and sometimes his kitchens, comes through in everything he does.

To maintain this performance level takes commitment. For Schwuger, that means commitment to the guests. “Personally, when I receive a request from a guest, my goal is to deliver to them as much as I can. I’m not satisfied with just answering the request—I try to go one step further.” It also requires more than a dash of inspiration: “… as a good Argentinian, fire is something that inspires me,” Schwuger says, “and that always comes up in my cooking style.” He also draws inspiration from the landscape that surrounds him in Los Cabos as well as the fresh product readily available. “The waters here have a biodiversity rarely seen in the world, especially one that’s untouched by man. The fish in these parts have a subtle and delicate flavor.”
